Leftovers = Brownies

This isn't very typical, huh? When leftovers become brownies?

Well, I had some leftover unsweetened Baker's chocolate from when making my BIL's birthday cake. They screamed at me and I caved. Eh. My inner fat kid, who is named PhilipĂ©, caved.

And, come on. Who DOESN'T love brownies?!

Leftover Bitchin' Brownies

2 squares (2 blocks) unsweetened Baker's chocolate
1/3 c. shortening
2/3 c. flour
1/4 tsp. salt
1/2 tsp. baking powder
2 eggs
1 c. sugar
1 tsp. vanilla

Preheat your oven to 350.
Melt the chocolate and shortening together. This is best to do in a double-boiler, because you have little to no risk of burning the chocolate. If you don't have a double-boiler, do what I do. Put the chocolate and shortening in a glass bowl and place it over a pot of boiling water. BAM. Easy.

While that's melting, combine your flour, salt, and baking powder in a mixing bowl.

Mix in your eggs, one at a time, and sugar gradually.

Now let's take a look at how the chocolate's going.

Perfect! Let it cool a bit and add it to your batter. Then add the vanilla.

Grease an 8x8 square pan (or you can double the batter and make a 9x13 pan) and pour your brownie batter into your pan. Even out the top a bit.

Bake for 25-30 minutes for chewy, moist brownies. Just the way God intended them to be.

This is our new addition, Piper, who faithfully guarded me while working in the kitchen. What a little sweetheart she is. :)
