FUNnel Cake..or something like it.


I love funnel cake from the fair. That, and the taffy at our local fair. I look forward to that stuff every year. What can I say? I'm a fat kid. I inhale the calories and don't think about it until the next day. Health conscious? No. But you only get to live once. And I want to do it right. Life's too short to be unhappy.
That being said, I don't reccomend eating these 24/7. In moderation, it's all good. I don't make these too often, so they're a great treat in this house. You can also top them with some fresh fruit and have them for breakfast, much like IHOP. Yum.



These were the first out of my batch, and it's almost a rule that I burn the first one. But it was still super delicious. I can almost taste it..*mouth waters*

That's A Load Of Crock Pot Roast


Worst news EVER to hear in this household.

The heating element went out in my oven.


I'm so beyond upset over this. I can't bake and I'm VERY limited to what I can cook. As if making food wasn't bad enough with little kids, the picky little boogers. Now I have to try and come up with ways to not keep making the same thing all the time on the stovetop or in a crock pot. While many people say "Oh, that's easy!", maybe they should try it. It's easy to say that when your oven is still in good working order. But I have picky kids and a picky husband. I'm pretty much stuck.
So, I went on the search for something easy and simple, and I kept coming back to pot roast. Okay, I tried making pot roast once before this, and it came out horribly dry and I vowed to never make it again. But, beggars can't be choosers, and by this point I was BEGGING for something. And so...


Nomnom! The carrots and potatoes were DELICIOUS. And the beef wasn't bad either!


The beef was still a LITTLE dry, but in the typical roast beef dry. Know what I mean? No? Well, deal with it.

Mac and cheese..on pizza?


I was always adamantly against the macaroni and cheese pizza at Cici's. "Macaroni and cheese is a meal in itself! It doesn't belong on a pizza!" Well...I tried it and, like it was the crack of the pizza world, I was hooked. I craved it. But the only downside is Cici's is in the next town over, a trip we can't usually make just randomly, and we can't always afford to go out. We have a lot of kids. And Kyle, who eats like a bottomless pit. So, I had to try and figure out how to make this. I finally attempted it today and, I'm glad to say, I'm fairly proud of the results. I may do some tweaking here and there, but not too much.


At first when I had it in the pan, I swore it looked more like a casserole. But after it was baked...

Yay! It looked like a pizza..kinda!
It's a pretty simple recipe. Definitely something I could do again and again.
